I braised short ribs in this for three hours and the heat stayed dead even across the whole bottom—no scorched spots at all. The temperature control is a nice touch too, way easier than guessing on my old pot.
The wide base really does make a difference — my risotto came out evenly cooked with no scorched spots at the edges. The temperature control is handy for keeping a gentle simmer without fiddling with the flame constantly.
The wide base really does make a difference—my sautéed onions came out evenly browned instead of scorching in one spot. The temperature control is handy for keeping a simmer steady without babysitting the knob.
